Meet Chef Shannon, the head chef of Cirqa, whose culinary journey began with a graduation from IHM Mumbai at Dadar, followed by three years at the iconic Taj Mahal Palace and Towers, where he honed his skills at the 24-hour coffee shop, Shamiana. Seeking to further expand his expertise, he pursued an accelerated culinary arts program at the Culinary Institute of America in Napa Valley, spending a year there before returning to India. Passionate about exploring diverse cuisines and ingredients, Shannon ventured to Australia for four months, working with renowned chefs Ben Shuri at Attica and Matt Wilkinson at Pope John. Upon returning to India, he joined the pre-opening team at the acclaimed Bombay Canteen, where he dedicated seven years to crafting exceptional culinary experiences.
